A Blogger Breakfast

Hi lovelies! I hope that you all had a wonderful weekend!

I had a great time at the LOFT event on Saturday and had a very relaxing Sunday. I slept in and then decided I couldn’t ignore my grumbling stomach any longer. But when I couldn’t decide on what to make for brunch, I thought, where better to turn, the the blogs! After all, one of the best part about this community are the delicious recipes bloggers post! So after a little browsing, I decided on the Fitnessista’s Coffee Berry Smoothie and made a few little changes like halving the recipe, omitting the kefir and adding a bunch of spinach. This has quickly become of of my favorite smoothie recipes, I think in part to the espresso as it gives the smoothie such an incredible flavor.

And seeing as it was around 12 when I was finally eating, I decided to also make Itty Bits of Balance’s Vegan Wheat-Free Oatmeal Pancake. This was my first time making an egg-less, wheat-free pancake and I loved how dense it was! Plus the flax egg gave it a nutty flavor that was delicious! Next time, I think adding chopped up nuts would make it even more better!

I spent the rest of my Sunday relaxing outside in the sun while I finished The Year of Fog and you can expect a review next week!

  1. I’m so happy that you liked my Vegan Wheat-Free Oatmeal Pancake! I’m planning on making some new changes to it for breakfast sometime this week and can’t wait to make it even more delicious 😀

    Also, I’ve been hearing about this Google Plus thing everywhere but have no idea what it is! haha

  2. Yum! That looks delish! I’ve tried a few blogger recipes (PB Fingers PB Granola and Carrots n Cake’s Oatmeal Banana Choc Chip cookies) and they’re ALWAYS amazing!

    I got an invite to Google + as well and I’m sooo confused by it all! I think I’ll stick with Facebook!

  3. I discovered Eat Live Run’s chai shake recipe – it was so good! I am trying her green tea smoothie next 🙂

    I feel like I can only handle so many social media sites so I don’t know what to do about Google+. Although, I have heard positive feedback about it!

  4. isnt it funny that when you make something really delicious and you cant wait to bite in..its almost impossible to take a good photo that isnt shaky or blurry! haha ❤

    oh and yes, you could totally cut down on the sugar in my muffin recipe- or half stevia half sugar would be just as good too…im sure even 100% stevia could be great as well! 🙂
